Creating Edible Easter Eggs?!

Easter is this Sunday and a lot of you will be dying Easter eggs with your kids. Now the question is, do you eat the eggs afterwards? I can tell you that growing up, I did, and it has created only slight side effects...like my youngest son was born with a third ear on his chest. KIDDING!

Another thing I learned during Culinary School is you don't want the green tint (not the dye green) around the outside of the yolk. This is not good for you. It is actually too much of the sulfur.

So, how do you create hard-boiled eggs the right way and what can you do with them afterwards. Easy.

Place your eggs in the pot with water covering them. Heat it to a boil then take it off heat and let them sit there about 10 minutes. It is that easy.

I was like to make devil eggs with them for Easter lunch and dinner or snack. Just slice the eggs in half and take out the yolks. Place in a big bowl. Add horseradish mustard, sweet pickles, roasted peppers and anaheim chiles. Place the mixture back in the center. Sprinkle with a little paprika and your done.

That is simple.
